Poached…How do you do them again?
I used to be afraid of this….usually passing this task onto my mother or just presenting family members with another egg alternative (there are so many after all). However, as I learnt today, poaching is not rocket science. Recipe books all suggest different methods….the whirl pool, the vinegar etc.
Today I was using a book of mine, ‘Eggs’. It didn’t’ suggest the whirl pool but it did suggest the vinegar and like magic it worked. Just a little vinegar and pour the egg into the bubbling section of the water so as to get the egg white to ‘fold’ around the yolk.
Keeping up the salads and trying to keep of the soufflés!
Instead of the usual brownies, mix them up with a little orange juice and zest.
Valentines Coconut Curry with Prawns
Serves 2
In a large pan heat up the oil and sweat 1/2 an onion with a clove of garlic. Add a green chili with a teaspoon of curry powder and stir for a couple of minutes. Add the prawns and cover with a can of coconut milk. Cook the prawns until nice and pink. Squeeze a lime and taste. Serve with some Basmati rice and cover with chopped coriander.
This recipe is fall proof and delicious for just staying in.

Second Term
Now on returning back to Brookes, I have decided to join rank with a friend of mine and combine meals on a regular weekly basis. This past week has produced perhaps the World’s Largest Shepherd’s Pie (or certainly Brookes’) and the patriotic Banger’s & Mash.
